Game to eat!

You'll love this delicious, seasonal game recipe and wine pairing.

Tis the season for wild British game! So we've included a delicious game recipe below and selected a brilliant Rhone wine which will match perfectly. Enjoy!

 

Ingredients
  • 2 venison sausages
  • 50g caramelised red onion
  • 1 small crusty loaf
  • 6 eggs
  • 500ml milk
  • 10ml rapeseed oil
  • 20g chopped thyme
  • Cornish sea salt
  • Milled black pepper
Method
  1. Heat a roasting tray and sear the vension sausages in the oil until they start to colour
  2. Dice the loaf into chunky pieces and add to the sausages
  3. Add the chopped thyme, red onion and season
  4. Whisk the eggs and milk together
  5. Pour the batter over the sausages and bake in a hot oven 220*c for 20 minutes
  6. Remove from the oven and serve

Cairanne is the name of the lovely, sleepy old village where this wine is made. It’s as high up the quality tree as wines from the neighbouring, famous Chateauneuf-du- Pape area but at just a snippet of the price. A serious and layered wine that is rich, intense and drenched in dark red fruit, sweet spice and chocolate flavours. Smooth and full of flavour - we love it!
