Calvados comes in four different grades of quality. ‘Fine’ has to have at least 2 years ageing. ‘Vieux’ or ‘Reserve’ at least 3 years. ‘VO’ or ‘VSOP’ at least 4 years and ‘Extra’ or ‘XO’ has to have at least 6 years and is often much longer. Therefore this calvados represents amongst the very best that is produced in the region and displays rich, dark brown colours with layer upon layer of concentrated apple and dried apricot flavours balanced beautifully with butterscotch, nut and chocolate notes. This is indeed the epitome of fine calvados.
