The grapes are picked once they have reached full maturity during the middle of September, this is done at night-time to preserve the fruit for longer. The fermentation is carried out at low temperatures in stainless steel tanks for a period of 20 days. The wine is kept for a short period of time in stainless steel tanks before being bottled at the winery.
Nose: Bright green and stone fruits with a floral aroma to finish.
Palate: Crisp and dry, lively mouthfeel with a juicy and ripe exotic fruit, mineral edgy-ness in the middle and clean finish.
Conclusion: Lovely concentration, weight and brightness. This wine has plenty of flavour and real character.
Fact: This comes from an 8-hectare property in the heart of Picpoul de Pinet.
