One of the very first gin creations on Falls Farm was the Harrington Dry. For the Four Pillars collaboration, they took the classic Harrington and gave it an Australian twist, using the finest Shiraz grape juice from Four Pillars, distilling
this along with their wattle seed and strawberry gum. During the distillation, they also vapour infused a little lemon balm and discarded orange peel alongside some of their staple Harrington botanicals to give this fruity and fragrant liquid it’s layers of flavour.
Top tips on how to drink:
For a simple yet perfect serve, pour over ice and top with Med Tonic, then garnish with orange. Also, bloody brilliant in martinis or delicious in gin sours and fizzes.
