A dry 100% Pedro Ximenez sherry. An extremly limited number of these bottles are made each year (just 1000 bottles) from casks that average around 15 years old. This is not fortified, the alcohol strength is natural.

Such a rich, nutty aroma jumping from the glass. The palate carries the richness but follows with bright and fresh flavours and texture, a mineral intensity and “lick” of acidity on the long finish.
